Coconut oil is derived from the meat of the coconut and is considered to be a safe source of saturated fat due to its classification as a medium-chain fatty acid or medium-chain triglyceride. As a fat, it acts as an emollient and softens and moisturises skin and hair. Coconut oil can be safely used when cooking with high temperatures as it has a higher smoking temperature than other monounsaturated or polyunsaturated oils. Keep in mind that although coconut oil is cholesterol free, it does still contain saturated fat so it should be consumed in moderation.
