Science Notes
Leafy greens are packed with an abundance of vitamins, fibre and minerals, all of which can help guard against heart disease, cancer, diabetes and other illnesses. Each individual green provides its own nutritional benefits, here are some of our favourites and the health-boosting advantages they offer:
Kale – Vitamin A, C and K, calcium, folate, potassium, iron
Spinach – Vitamin A, C and K, folate, calcium, iron, beta-carotene, omega-3 fatty acids
Broccoli – Vitamin A and C, folate, potassium
Cabbage – Vitamin C and K
Related Tip
Make a green smoothie or juice every morning. Start by adding 250 ml of filtered water or organic apple juice to a blender and add three pieces of fruit such as banana, orange or apple. Add 2 cups of kale and/or spinach and blend for 30 seconds or until smooth and creamy.>
