Omega-boosted quinoa with berries & yoghurt

This delicious dish is packed with nutritional value and super easy to make. 

PREP: 10 minutes  |  COOKING: 20 minutes  |  SERVES: 2

INGREDIENTS:

1/2 cup quinoa, rinsed and drained

1/2 cup unsweetened apple juice

1/2 cup water

1 tbs dry-roasted almonds, chopped

1 tbs chia seeds

1 punnet blueberries

8 medium strawberries, quartered

4 tbs low-fat Greek yoghurt

INSTRUCTIONS:

1. Place the quinoa, apple juice and water in a saucepan and bring to the boil.

2. Reduce the heat to simmer, cover the pan and cook for 15 minutes.

3. Remove from the heat and fluff the quinoa with a fork.

4. Stir through almonds and chia seeds.

5. Serve hot or cold topped with the berries and the Greek yoghurt.
