The Fermentary is dedicated to making real, slow food that people can enjoy for their amazing flavour and health benefits.
At The Fermentary, we make authentic, slow fermented food and drinks. We make fermented vegetables, kefirs, mustards, miso, and kvass. Our ferments are good for your gut, but also for your mouth, and your soul.
We also conduct workshops to teach what we do and help people produce their own fermented foods.
The Fermentary is an Australian micro-business based just outside of Daylesford in a very large old abattoir...which is fitting because it is the microbial world that actually does all of our beautiful work.
