I sometimes serve this salad with an organic egg, organic chicken or or wild caught fish. My version also contains wild grown Kangaroo Island ingredients but what matters most is the balance of nutrients and of course buying local where possible. (I am from OrganiQ on Kangaroo Island.)
The Blue Zones are a number of geographical regions that have been scientifically documented to have the oldest living people and lowest rates of chronic disease compared to anywhere else in the world. The Beauty Salad is inspired by Icaria. Icaria is an island in Greece where people eat a Mediterranean diet rich in olive oil, red wine and homegrown vegetables.
The idea is to grab ingredients in whatever quantity feels right, trust yourself and simply wash, chop, toss.
Cucumber - cooling and filled with collagen
Celery - rich in vitamins A, K, and C, plus minerals like potassium and folate
Blanched Broccoli - contains iron, potassium, calcium, selenium and magnesium as well as the vitamins A, C, E, K and a good array of B vitamins
Blanched Carrot - blanching allows the nutrients to be better absorbed
Avocado - great source of vitamins C, E, K, and B-6, as well as riboflavin, niacin, folate, pantothenic acid, magnesium, and potassium. They also provide lutein, beta-carotene, and omega-3 fatty acids. GOOD FAT THAT MAKES YOUR HAIR AND SKIN GLOW
Grated beetroot - acts a great blood purifier, which is key in keeping your skin glowing and healthy. Also rich in Vitamin C which helps in clearing blemishes and evens out your skin tone while giving it a natural glow.
Pinch of Seasalt - we use Kangaroo Island seasalt but you can use any natural seasalt (without anti caking agents!)
Splash of EV Olive Oil - contains over 30 various types of phenolic compounds, which are powerful antioxidants that help protect the body against free radicals. rich in monounsaturated oleic acid. This fatty acid is believed to have many beneficial effects such as reducing inflammation and keeps your skin and hair glowing.
Squeeze half a lemon - High in vitamin C and a natural digestive which aids nutrient absorption
Chopped fresh Chilli
Hand mix your salad gently and then simply add and gently toss each piece of the dressing. Enjoy!
